St. Patrick’s Day has always stumped me when it comes to food. There’s something about all green food that makes me a little weak in the knees (and not in the Russian chocolate kind of way).  My approach to St. Patrick’s Day is to serve things in rainbow colors!!

I found these Wilton cake pans at Target!  I was looking for a $10 pan but these came in a bit more  (super bummed to have found them even cheaper online after I made the purchase).




However, due to their smaller, slimmer size I will actually use 1/2 of the ingredients for a normal cake size.  And because of this I’ll save about 5 bucks every time I go to make a new creation (so worth it!)

Cuteness.

I took a scoop from each Wilton pan and popped into one cupcake liner.

Instead of sprinkles, just substitute in Lucky Charms.  Sprinkle on top!  Makes for a crunchy but not too crunchy topping.  Yummy!!

I used a skewer to pop my gold coins onto for the final show piece.
