Heart of Texas Cookie (for the Texas Longhorn in your life)

Cut-out holiday sugar cookies don’t need to only be for Christmas time. I mean, with any cookie cutter, cookies celebrate the seasons of your life.

Make sure your cookie jar is currently empty. Make sure a glass of milk is handy.  From sprinkles, to mint chocolate, to icing, to gingerbread, to red velvet, to peanut butter– I think you’ll all find a cookie to love. Ready for this?


I’m not a Texan.  I’m a Floridian, turned Californian who ended up in Texas marrying a Texan.

He’s a Longhorn.  They play some good football there but its also a pretty darn good university.  He worked hard to get in (back in the day), hard to stay there and graduated with flying colors.  So I wanted to put something special into his University of Texas iced cookie.

I love eating Paleo but when it comes to my desserts, sometimes I go a little semi homemade.  I grabbed my Texas cookie cutter, a roll of sugar cookie dough and made the cut.

I whipped up some icing out of 2 cups of confectioners sugar and 2 tablespoons of White Chocolate Mint Martini Mix from Dove Chocolate Discoveries.  Crazy good!!!  Yes, I tested it over and over and over again.  It checks out just fine.

I popped the icing into my Wilton bag and swirled on some creamy, dreaming frosting.  The more the merrier is my motto!

But, I had to add a dash of Austin in a heart as well as a burst of flavor.

So I grabbed one of my oils, Citrus Fresh, from Young Living.  The Citrus Fresh gives a sunshine-y burst of flavor.

So perfect for the heart on this Texas cookie.  Whenever we visit Austin from Dallas, we always find it to be bursting, with vitality, positivity and spirited citizens.  We just love going there, especially with our pups (puppy owners know how dog friendly this city is, see our crazy labrador below).

Trust me when I say that adding a drop of pure essential oils to your recipes do SO much for it.  My hubby loved this heart surprise.  soft-centered, yet slightly crisp edged recipe. In fact, even Young Living tells us that this oil, Citrus Fresh brings about well-being, creativity, and feelings of joy.

Austin = well-being, creativity and feeling of joy.  Just go kayaking or stand up paddle boarding in Town Lake with your crazy lab, then fall in to the water over and over.  That’s pure joy! Especially for her!

 Pop in some flavor then pop one of these into your mouth.

You might even start humming the University of Texas fight song.
